Eggplant stew with Basmati rice for me; cold Chateaubriand (sp?) with warm Lipton onion potatoes for hub. Dogs have been fed and biscuited already.

My town is having it's annual turning on of the holiday lights get together downtown tonight (even though the lights have actually been on for the last couple of weeks) so I'm throwing together a pot of potato soup and the old stand-by chili in hopes that my friends will want to get the hell out of the cold and come back and watch college football.

I'd hate to have to play the "I was just in the hospital two nights ago, I think I'm going to head back to my place so this doesn't turn into pneumonia," card but I'm not too proud to break it out if I have to. :D

Chicken stew with noodles, mushrooms, carrots, and peas. I love the crock pot in the winter!

I'm going to bake the living hell out of a huge sweet potato. I'll top it off with a bunch of butter, a little brown sugar and some cinnamon.

Yet another night of eggplant stew. Will have the remainder for lunch and dinner tomorrow. Whew! I have got to find some vegan recipes for one person. Yes, I do freeze things.
