IowaMan go out and buy a cheap wooden cutting board. About 1/4 of the way from one edge of the board acroos the top cut a 1/16 inch deep slot. At one end of the slot cut a 1/8 inch deep slot across the edge of the board. On the underside of the board on the end where you cut the slot cut an 1 inch long slot 1/4 deep going the Opposite way. Go to the local music shop get a guitar string(you might want to do this when you get the cutting board). Go out and steal two nails from the guys working on your house cut the tip and head off the nails (cut to and inch long). Take the guitar string and tie it to the nails to either end. Then take the one nail and put it in the slot you cut in the bottem of the board stringing the guitar sting up threw the slot you cut on the edge. put the cheese on the board so where you want to cut is over the slot. Useing the other nail as a handle pull the guiter string threw the cheese(this should work on any soft and simi soft cheese).
